How To Make Vegetable Soup.
This is a Soup recipe that is also suitable for vegetarians.
First collect together your vegetables and a jug of stock which can be made from a stock cube (as per instructions on the box) or your own homemade stock or if neither are available hot water for the stock.
Cut up a selection of vegetables that you have available such as :
Celery, Onions; Shallot onions are especially good in home made soups.
You can also use red, yellow or orange peppers, parsnips, potatoes and if you wish tomatoes.
Adjust this recipe to what is available and your own tastes as this recipe idea is just a starting point.
To Cook your soup:
- Put a tablespoon of olive oil in a pan you can use a deep saucepan or a good size frying pan to start the vegetables off in...
- Soften the vegetables over the gentle heat on the top of the stove/oven until they are soft but not browned.
You are now ready to add the stock of your choice to the vegetables.
Add a squirt of tomato paste (the sort you buy in a tube) to the stock if you wish.
From the jug slowly add the quantity of hot water/stock you need for the quantity soup you are making.
Re/ Stock quantity: remember the slow cooker/crock pot has a maximum capacity that you must not exceed, please refer to the manufacturers booklet if you are unsure about this.
(If you are not using a slow cooker continue to cook the soup in a saucepan on a gentle heat on top of the stove/oven/ on the hob. A simmering heat or less is suitable.)
If you are are using a slow cooker ....give the ingredients a chance to warm through in the saucepan and give the stock a good stir then transfer it into your slow cooker.
Make sure the slow cooker is switched onto the correct temperature follow the manufactures instructions/advice on this. The lower the temperature setting the longer it will take to cook.
When it smells wonderful and it is cooked (you will know by the texture and the taste) serve this vegetable soup with chunks of home made bread or shop bread like French stick or ciabatta and add salt & pepper to the soup to your own taste.
For a smooth vegetable soup:
If you like your soup smooth blend it once it has cooled in a blender or with a stick blender, but on a cold day chunky vegetable soup makes a more filling meal. Enjoy.
If there is no cooker/oven/hob to start it off as suggested in the recipe, then put all of the ingredients into the slow cooker from the start leave out the oil and allow more time for it to cook.

Thank you metoboy, I would love the recipe for stifado. I cook my own 'English version' of it but it is not quite the same as some of the best I have eaten on holiday in the Greek islands.
This sound yummy! I love soup, and I love veggies. I have never tried it blended, but now I think I will. But I must admitt, I have no idea what ciabatta bread is! Now I'm so curious! (PS... how is your garden coming along?)

yyn1221 that is exactly it, I enjoy the stifado that I cook but I am always left wondering could I imrove on it.
The different Greek Island also seem to have slightly different versions of it.
The best stifado I have tasted was in a taverna in a village which we walked to and which was for locals more than tourist trade. We have been told that stifado is made with different meat on some islands - one place told us that although they use beef now tradtionally it was rabbit they used in the recipe. I think in some places there is the taste of something spice like in it with a hint of clove - it could be allspice. I may post my version here but I would prefer an authentic Greek recipe if it were available. Thank you.
